Saint John's Wort Ale - Part 2

2 Weeks 1 Demijohn

It's been just over a week since syphoning off the ale and fermentation is definitely complete.

The ale has gone from Horlicks, to a very light, almost clear golden colour, to a much darker brown now done. About half way through the fermentation (around the light golden stage) it appeared as if the it had completed, but on tasting it most definitely hadn't.

Here's how the finished product looks:

Fermentation Complete

...and in the glass:

So how does it taste:

The ale has a nice bitter after taste, and is actually slightly hoppy. No extra sugar was added after syphoning off, but there's a sweetness to it, and it's also very slightly (and pleasantly) effervescent.

..it's also bloody strong. The smell of it isn't immediately inviting. There's an earthy smell to it, but that doesn't really matter, because, you know, it's bloody strong.

Definitely a good experiment, and most of it is already promised to the neighbours (who liked it at the light-golden stage), but this can most certainly be improved.
